Morel mushrooms?
I am extremely lucky to live in an area that is abundant with Morel mushrooms every spring. We pick 5-gallon pails full of these delicious little devils and we cook and eat as many as we can when they are fresh, and then cook and freeze the rest. The only way that we know how to cook 'em is by cooking them down until most of the water is gone and mix them with fried cream, onions, and dill. They are amazing but what else can we do with them? I look forward to picking them every year because it is so much fun and they are such a treat to eat! I'm aware of how expensive they are to buy and the fact that we get tons of them for free is just awesome. So what other ways can I cook them? Thanks.
MOREL MUSHROOM SOUP
6 c. morels, fresh
1 med. onion, chopped
2 sticks celery, chopped
4 c. milk
4 tbsp. flour
Salt & pepper to taste
1. Gently fry morels, onion and celery in a small amount of oil until just tender.
2. Stir in flour gradually then add milk, salt and pepper.
3. Simmer gently until slightly thickened.
If you like smooth soup you can whizz in a blender.
This freezes well too!
